glöd takes its name from a Scandinavian word for the ember — the deep red glow and heat that remain in charcoal after the flame itself has settled. It’s the idea behind the kitchen: live-fire cooking with charcoal and smoke, built to draw out the character of each ingredient rather than cover it up.
